Beef and Vegetable Stew?

Maybe this is not what I am to do but here I go....do you have an excellent Crock pot Beef and Veggie stew recipe? My husband loves stew and I want a crock pot meal this week. Can this happen? I know I could go online and search one out but wanted a tested one by friends...that would be better. If you have one, please post. This seems to be a great staple for the Fall season anyway so hope someone on our club has stew on their mind. Thank you and hope to reciprocate!

Hi Traci!

We made this today! We put it in before church and it was ready by lunch time. So quick and easy.

We use beef soup bones (our grass-fed beef)....its a cheaper cut of meat so you get a lot of bang for your buck. The only thing with soup bones is that they tend to be a little fatty so you would need to pick a little fat out if you didn't want to bite down on the texture. My hubby likes it and I don't. So I pick it out and leave it for him.

You can also make it with stew meat or cut up sirloin and use that too.

Put meat in your crockpot with water and onions (we sauteed these in olive oil for added flavor). For 5 lbs of meat (this is a lot of meat..btw) we used 6 cups of water.

Turn it up on high. After its cooked for about two hours, add your veggies. We used the frozen mixed organic veggies from HEB for this. Then we cut up some red potatoes, celery, and then added in a can of diced tomatoes. Then cook for another few hours till veggies are soft. You don't want to add your potatoes at the very beginning because they will get all soft and mushy by the time its done cooking so I wait a few hours.

As for seasoning, the soup bones created a nice creamy texture to the broth from the marrow. We added salt, pepper, onion powder, garlic, and two bay leaves.

I homemade some cornbread too! It was a winner. We will be eating on it for a few days.

Ha! Just noticed I said "WE" throughout my comment. The "WE" is referring to my precious 5 year old and I! She is quite the helper in the kitchen these days:)

Yes this helps! Since I did not know where to begin..thank you...I pretty much have all but the wonderful soup bones..that is another story. I recently tried to make beef broth with bones and failed. Well, it was several months ago. I am just using a product from HEB called Better Than Bouillon Beef Base. It is organic veggies and beef juices ..I also get the chicken and veggie versions of this bouillon..it works and is fast of course. I like your way..sound more like Nourishing Traditions and sounds great. Well, I will give this recipe a go on Wednesday..thank you very much!
